Spirulina is the common name for two species of cyanobacteria, or blue-green algae. A staple food of the Aztecs until the 16th-century, it is now cultivated throughout the world. Spirulina is rich in amino acids, minerals, and vitamins. Its store of protein and vitamin B-12 make it a popular nutritional supplement for vegetarians. Earthy cumin, fragrant Mexican oregano and spicy crushed red pepper flakes balance spirulina's strong flavor, making this recipe an easy way to incorporate this popular supplement into your diet. 2 avocados, pitted and diced 1/2 lemon, juiced 1/2 lime, juiced 1/2 teaspoon Sea Salt 2 tablespoons Spirulina* 2 tablespoons chopped onion 1 clove minced garlic 1/4 teaspoon Cumin 1/4 teaspoon Oregano 1/4 teaspoon Red Pepper Flakes 1 tomato, seeded and chopped Additional avocado slices, for garnish *Note: If you aren't accustomed to spirulina's strong, grassy, sea flavor, start with 1/2 teaspoon and add more to taste. 1. Mash avocados lightly in a bowl with lemon, lime juice and salt. 2. Mix in 1/2 teaspoon spirulina, onion, garlic, cumin, Mexican oregano and pepper flakes. Taste and add more spirulina as desired (see note). 3. Gently fold in chopped tomato. 4. Garnish with additional fresh avocado slices. Serve immediately with tortilla chips or as a condiment for tacos, burritos and sandwiches. Spirulina and Nutritional Yeast Seasoning Nutritional yeast and spirulina powder beat plain old salt and pepper in seasoning power and flavor, not to mention nutritional punch. In addition to a grassy, nutty and slightly cheesy flavor with a hint of heat, this blend is a great way to introduce the benefits of spirulina and nutritional yeast into your diet. 4 tablespoons Nutritional Yeast (flakes or powder) 1 teaspoon Spirulina Powder 1/4 teaspoon Sea Salt 1/8 teaspoon Cayenne, or to taste 1. Measure and thoroughly blend all ingredients. 2. Store mix in a glass jar or tin with a tight-fitting lid. Keep away from moisture. Sprinkle on popcorn, kale chips, steamed vegetables, baked potatoes and more. Yields: 1/4 cup
